The Tastes of Jeongseon

• Gondre (cirsium setidens) Rice
  
  Gondre is a type of wild green which is recognized by its large leaves and long roots.Rice is cooked together with gondre, mixed with seasoned soy sauce and eaten. Gondre has a unique scent and an abundance of fiber. It is well digestedand thus does not upset the stomach.
• Kotdeungchigi Noodles
  
  Kotdeungchigi means ‘hit the nose’ in Korea. This buckwheat noodle may slap your nose when you eat it because of a thick and resilient texture. It has been called ‘Pressed noddle’ in Jeongseon from the past. Now it is known as Kotdeungchigi Noodle. A bowl of cold Kotdeungchigi Noodle would be the best dish for summer.
• Hwanggi Jokbal
  
  People first think of ginseng as a representative medical herb for health. However, Hwanggi (mik vetch root) is as effective and widely used as ginseng. Since the color is yellow and it’s a good medicine, Hwanggi is also called ‘Danneosam.’ Jokbal (boiled pigs’ feet) cooked with Hwanggi is crisp, delicious and has no burnt smell.
• Hwanggi Whole Chicken Soup
  
  Hwanggi is Jeongseon’s representative medical herb. Since it is effective in preventing sweat in summer, Jeongseon people have used it to cook chicken soup from the past. If Hwanggi is used as one of the ingredients for the chicken soup, it dissolves the chicken oil, making the soup crisp. In Jeongseon, Hwanggi Whole Chicken Soup is provided for honored guests.
• Buckwheat wrap
  
  Buckwheat wrap is Jeongseon’s special dishcreated to escape the summer heat.In the deep winter, the people of Jeongseon eat buckwheat wraps fried on a large cast-iron pot lid, with marinated stuffing. The spicy and clean taste stimulates the taste buds.
